It's a NOLA thang. Grillades are pieces of round steak or veal, lightly dusted with flour and pan fried.

Personally, I find them flavorful, but a little tough. To each his own I guess.

Family style at our house was fresh garden vegetables home grown, fresh fried fish, raw oysters, and fried or boiled shrimp, grilled sirloin, chicken fried or grilled, stews, casseroles, soups, did I leave anything out? Oh yea, salad with Italian or Thousand Island dressing. And channel 7 on the news, followed by Mutual of Omaha's Wild Kingdom. I don't know much about the family meal you're serving.

It's a delicious brown butter sauce. Oh, butter. I'd love to meet the man who invented butter. Brilliant.
