    Happy National Oatmeal Month

    Old Fashion Oatmeal Cookies IISubmitted by: D.B.

    "My family's favorite and I can't show up for Christmas without them! If you're a chocolate lover, you can use chocolate chips in place of the raisins."
    INGREDIENTS:
    2 cups all-purpose flour
    1 teaspoon baking soda
    1 1/2 teaspoons ground
    cinnamon
    2 cups quick cooking oats
    1/2 cup packed brown sugar
    1/2 cup white sugar
    1 cup shortening
    2 eggs
    1/2 cup milk
    1 teaspoon vanilla extract
    1 cup raisins
    3/4 cup chopped walnuts

    DIRECTIONS:
    1.Preheat oven to 375 degrees F (or 190 degrees C). Grease cookie sheets.2.Put all ingredients except raisins (or chips) and walnuts in food processor. Mix well.3.Put in bowl and add raisins and walnuts, stir.4.Drop by teaspoons onto greased cookie sheets. Bake for 12-15 minutes.     Lazy Day Oatmeal Cake Recipe
    BATTER

    1 cup uncooked rolled oats (instant or regular, I used rolled oats)
    1 1/4 cup boiling water
    1/2 cup butter or margarine
    1 cup granulated sugar
    1 tsp vanilla
    2 eggs
    1 1/2 cups flour
    1 tsp soda
    1/2 tsp salt
    3/4 tsp cinnamon
    1/4 tsp nutmeg

    TOPPING

    1/4 cup butter or margarine, melted
    1/2 cup brown sugar
    3 tbsp cream or milk
    3/4 cup flaked coconut
    1/3 cup chopped nuts (optional)

    In a shallow bowl soak oats in boiling water for 20 minutes. Meanwhile proceed by measuring butter and sugars into beater bowl and beating until light. Beat in eggs and vanilla. Sift and measure flour, sifting again with the soda and spices. By this time the oats will be soaked and cool. Remove beaters from creamed mixture and fold in soaked oats. Sift flour mixture over and fold in. Turn in a buttered 9x9" pan and bake at 350°F for 40 to 50 minutes.

    Mix all the topping ingredients. Do not remove cake from pan but while still hot spread topping over and put under the broiler until bubbly and tinged with gold. Watch carefully.


    This is pretty close to my mother's oatmeal cake...and it was scrumptious!

    After many trips to Europe, I have gotten accustomed to raw oatmeal with fruit and nuts for breakfast. That is, unless when I'm in SoWal where I have a spinach fritttata at Hibiscus or two overlight eggs/bacon/grits/wheat toast at Red Bar.

    So pretty much every day is oatmeal day for me unless strawberries are in season. Then it's strawberries and Cheerios. I love the feeling of those circles on my tongue, plus they don't get soggy. I love circles.

    Oatmeal raisin pecan cookies are yummy!
    Otherwise it had better be Quaker so thick I can eat it w/ a fork and full of raisins, brown sugar, or walnuts - don't do goopy oatmeal!!!

    P.S. Cheerios rock! I eat them several hundred times a year!!!

    I don't do goopy either. Really, I only like the old-fashioned kind you have to cook for five minutes or longer if I'm gonna eat it like cereal for breakfast. I like them when they're kinda chewy. Let me tell you though, that cake above is to die for.
