    Fajita Chicken Salad

    Description: The title says it all.
    Serving Size: 10+
    Difficulty: Easy

    Ingredients:
    1. Chicken
    2. Mayonnaise
    3. Celery
    4. Jalapeno
    5. Purple Onion
    6. McCormick Fajita Spice
    7. Cilantro
    8. Salt
    9. Pepper
    Preparation:
    1. Marinate 8 chicken breasts with McCormick Fajita Spice for at least one hour prior to grilling.

    2. Mince in a food processor 2 stalks celery, 2 jalapeno's (no seeds unless you like spice), half a purple onion, and bunch cilantro.
    Instructions:
    1. Cut the cooked and cooled chicken breasts into small cubes (about 1 inch) and use the processor to shred the chicken, about 8-10 pulses.

    2. Place chicken in large bowl and add 1 1/2 cups mayonnaise (Hellman's Olive Oil Mayonnaise works very well) add minced vegetables and mix. To add additional fajita flavoring add 1/2 tablespoon of the McCormick Fajita spice.

    3. Salt and Pepper to taste and refrigerate for 24 hours.

    I think I just did, I found it in my fridge and it was delish! Wonder how it got there? Thanks to whoever made it, it really is wonderful!

    SWGB , this recipe sounds delicious! Any ideas how to minimize and/or make a substitution for the mayonnaise? Even though I ate mayo as a snack when I was a kid , my husband isn't wild about it. He'll eat cole slaw with a little mayo in it, but that's the extent of his mayo consumption.

    you could cut the mayo with some sour cream for non-mayo fans? I'm thinking this sounds great and maybe spread thinly across a nice fresh flour tortilla and then rolled and sliced into pinwheels would be really cute. Also would be nice served in baked tostito scoops!
