    Shrimp Rolls

    Description: Easy to prepare hors d'oeuvres
    Serving Size: 24 - 28 servings
    Time: 30 mins
    Difficulty: Easy

    Ingredients:
    1. 1 lb medium shrimp
    2. 1/4 c grated cheddar or Monterey Jack cheese
    3. 2 tbs freshly grated parmesan
    4. 1/4 c heavy cream
    5. 1 tbs med-dry sherry
    6. 2 tbs minced scallion
    7. 12 to 14 slices thin sliced bread - crust discarded
    8. 1/2 stick unsalted butter, melted
    Preparation:
    1. Shell & Devein 1 lb medium shrimp & boil in shrimp boil until pink. Rinse in Cold water, drain, pat dry & chop fine.
    Instructions:
    1. In a bowl stir together shrimp, cheeses, cream, sherry & scallion. With a rolling pin flatten each bread slice to approx 3/4". Put approx. 2 tbs shrimp mixture on each bread slice & roll up tightly. Put rolls, seam side down on a baking sheet & brush with melted butter. Cover loosely & chill rolls at least an hour.
    2. Preheat oven to 425 degrees.
    3. Cut shrimp rolls in half & arrange on baking sheet, seam sides down. Bake until golden brown, approx. 12 mins. Serve warm.

    Sounds good. Glad it makes rolls since I'd hate to just eat 1.
    I think I'll try these for game day Saturday. They are low calorie? Right?

    Shrimp..good, bread..good, cream..good, cheese..good, butter..good. How can you go wrong with these ingredients? Thanks for posting. I'll put these in my holiday rotation.
