Mexican Cornbread
Description: here's another easy and good cool weather recipeDifficulty: Easy
Ingredients:- 1lb ground beef
- 2 packages cornbread mix (not the sweet kind)
- small onion
- salt and pepper
- 1 tsp garlic powder
- nacho slice jalapenos
- milk
- eggs
- 8 cheese slices or 8-10 oz cheddar
- 1 can creamstyle corn
- 1-2 cans pinto beans
Preparation:- brown beef with onion, salt and pepper and garlic powder with 2-4 Tbs diced jalapenos
- shred cheese or unwrap singles
- Prepare cornbread but omit a little milk and then add cream corn to cornbread mix
- Drain pinto beans-well
Instructions:- Grease a casserole dish
- Combine meat mixture with pinto beans and pour into bottom of pan
- top with cheese then pour cornbread over top
- Bake at 425 for 20 minutes or until cornbread is done
- 1lb ground beef
