Savory Cornbread
Description: More than Just Mexican CornbreadServing Size: 4Time: 45 minutesDifficulty: Medium
Ingredients:- 1 pkg Martha White Yellow Cornbread mix
- 1/4 C Olive Oil
- 1 tsp chili powder
- 1tsp sea salt
- 1 tsp cumin
- 1 1/2 C grated cheddar cheese
- 1/4 C milk
- 1/4 C cilantro
- 2 jalapenos
- 1/2 medium onion
- 1/2 red bell pepper
Preparation:- Chop two jalapeno peppers, finely
- Chop half of a medium sweet onion, finely
- Chop half red bell pepper, finely
- Chop 1/4 cup cilantro
- Grate 1 1/2 cups cheddar cheese
Instructions:- Preheat oven to 400 degrees. Place 8" iron skillet in oven to heat with about 1/4 C of olive oil.
- Mix cornbread following directions on package.
- Add remaining ingredients. Mix well.
- Remove skillet from oven. Pour mixture in skillet and return to oven.
- Bake for about 28 to 30 minutes.
- Serve warm
