Hubby is in Australia, so I had a turkey-provolone rollup to "celebrate" May 5. BTW no one hubby has met in AU has even heard of Cinco de Mayo. He planned to educate them on Mexican beer last night. It's 5 AM on Saturday there, so I hope to hear from him soon to see if he could even find Mexican beer in AU. BTW he says he hasn't seen one Latino there, not one black person there, ana handd ful of Asians. Weird.
Daughter was grumpy yesterday because her hubby was tied up studying for a final exam at GT today. She celebrated Cinco de Mayo by having a bowl of Kashi cereal.
I reminded her that her daddy pays our bills, and when her hubby gets out of grad school, he'll pay the bills.
It's just an unfortunate fact that females who are as intelligent and well-educated as males make less money.
In my next life I will get a BS, be a stay-at-home Mom, and have the time for friends instead of focusing only on family and work.

The Aussies are great people! They also tend to be much more conservative as a whole than Americans. Their main contingent was established at Vung Tau where I was stationed my second tour and we had a great relationship with them. Admittedly, it consisted mostly of carousing and drinking but it was a lot of fun when both groups were not working. I believe the main reason you may not see many of other nationalities and races in Australia is the fact their immigration system works! Ours is totally broken. They are, I understand, very selective on who they allow to immigrate.

Do you know what their policy is about dogs entering AU?
My husband turned down being CEO of his company's European division because England required our poodles to be quaranteed for 6 months. At the age of 15, our vet said they wouldn't survive. So we turned down the opportunity to be very wealthy.
Pepper is just 6, so she could survive quarantine. But I'd hate to have such a loving and beautiful and intelligent dog caged up for 6 months. Since she is a standard poodle, she is too big to bring on board a commercial flight. If we take her to AU on a private plane, could we circumvent a quarantine? I wonder if we could buy her a ticket and put her in her crate in her own seat in business class?
I need to research this. Any help would be appreciated.

I have no idea what their policy is regarding the entrance of pets. I once owned a Siamese that had to be quarantined before he could enter Germany but I have no knowledge of what the Aussies require. I have only visited there.

I believe Australia is a minimum 30 day quarantine and there are only 3 cities w/ facilities to quarantine them, plus you have to make the arrangements at least 6 months in advance. It's about $1400 Australian dollars.
But IMO quarantining a dog is cruel. Especially one as spoiled as your dog. It's doggie jail, not a doggie spa.

Once you read the restrictions that would be put on Pepper, how much exercise she could get, the size of the space she would be in, and how frequently you could visit her etc. there won't be any decision of whether or not to quarantine her.
It really is doggie jail - if she was in a human jail for killing someone she would have more space and exercise.

Happy Cinco de Mayo to you all! Hope you had a good one!
We decided to avoid the crowds and cook at home. I made homemade salsa, chicken tacos, and spicy cole slaw. I cheated and bought Gordo's cheese dip. Negro Modelo to drink. Excellent! We enjoyed prepping it while watching the Derby.
Chicken Tacos (Serves 4)
1.5 pounds boneless chicken breasts
1 tablespoon EVOO
1 red bell pepper, sliced into strips
1 onion, coarsely chopped
1 poblano pepper, coarsely chopped
1 lime, juiced with peel reserved
3 cloves of garlic, crushed and coarsely chopped
1 can of stewed "Mexican" tomatoes with chiles
1 package of Old El Paso Low Sodium Taco Seasoning
Garlic salt, to taste
Crushed red pepper flakes, to taste
Crispy taco shells or soft tortillas (your choice, prepared according to package directions)
Optional -- your favorite taco toppings ( shredded lettuce, tomatoes, shredded Monterrey jack, sour cream)
Spicy Cole Slaw
1 bag of pre-shredded cole slaw mix
4 tablespoons of Hellman’s light mayonnaise
1/4 teaspoon paprika
1 large pinch of dry wasabe
10-15 slices of pickled jalapenos, chopped
1/4 cup of liquid from jalapeno jar
1 fresh jalapeno pepper, finely chopped
1 pinch of sugar

We met my folks and brother for Cinco de Mayo/early Mothers Day in Dallas at Uncle Julios for guacamole, queso, fresh flour tortillas, tons of chips n salsa, a plato gordo-beef and chicken fajitas, a rack of pork ribs with Mexican rub and cheese and pepper bacon wrapped grilled shrimp with charro beans and rice and an order of cheese enchiladas to share-omg, the humanity, oh yeah and Pacificos and Margaritas and mini sopapillas and a chocolate empanada with ice cream; they had to roll us out of there!!! A great way to celebrate the holiday!
