    Italian Love Cake

    Description: Easy, rich, cool & creamy!
    Time: 1 hour
    Difficulty: Easy

    Ingredients:
    1. 1 Box Devils Food Cake Mix
    2. 2 lbs. Ricotta Cheese (softened)
    3. 3/4 Cup Sugar
    4. 4 Eggs
    5. 1 tsp. Vanilla
    6. 1 3 oz. pkg. Instant Chocolate Pudding Mix
    7. 1 cup Milk
    8. 1 8 oz. Carton of Frozen Whipped Topping (defrosted)
    Preparation:
    1. Mix Cake Mix as Directed.
    2. Pour into greased & floured 9 x 13 pan.
    3. In another bowl, combine ricotta, sugar, eggs & vanilla.
    4. Mix well.
    5. Spoon over unbaked cake.
    6. Bake cake at 350 degrees 45-50 minutes.
    7. Cool.
    Instructions:
    1. Mix pudding with milk.
    2. Fold in wipped topping.
    3. Spread over cake and refrigerate.
    4. Serve chilled.
    5. Refrigerate leftovers.

    How ironic, we just had this on Memorial Weekend. It was my son and daughter in law's birthdays and her mother made it for them for their party at our house. It was very, very good!!

    Since I’m Sri Lankan, I thought of sharing the Sri Lankan love cake which is extremely famous and quite different in taste from the other cakes. Here are the instructions on how it is done:

    Finely chop 375 grams of cashew nuts. In a bowl, beat 200 grams of butter with 1 ½ cups of sugar until it becomes creamy. Add one egg yolk at a time (eight yolks altogether in total).

    Fold the chopped cashew nuts together with 1 1/3 cups of semolina, 2 teaspoons of rose water, one teaspoon of each cardamom and cinnamon and ¼ teaspoon of nutmeg. Beat four egg whites and fold into this mixture.

    Bake for about one hour and dust with icing sugar before serving.

    I came across this No-bake Love cake as well and judging by its ratings from people who have treid and tested it, it really does appear to be a wonderful recipe.

    Ingredients:

    -1 bakery-bought half sheet cake (that is frosted white)
    -1 bakery-bought 10 inch and 8 inch layer cake that is frosted white.
    -15 decorated cookies- wedding theme.
    -And silver dragees.

    Method:
    Keep the 10 inch cake in the centre and the 8 inch cake over that. Decorate the sides and the top of the cake by gently pressing the cookies you have on the frosting. And finally, complete the decorations with the dragees.

    Oh man I think i need to make this today...I am teaching my 15 yr old son how to cook and making desserts is so inspirational :)
