    Easy Black Beans and Rice

    Description: Just one of my favorite easy meals to prepare during the week.
    Serving Size: 4
    Time: Three minutes of prep; rice takes 30-40 minutes
    Difficulty: Easy

    Ingredients:
    1. 1 cup of brown rice
    2. 2 cans of Progresso black beans
    3. 1 can of Rotel
    4. Cumin ( 1 tsp. or whatever you want)
    5. Garlic salt (1 tsp or whatever you want)
    6. Optional: "Mexican" shredded cheese if you have some
    Preparation:
    1. None.
    Instructions:
    1. Start cooking the rice, preferably in a rice cooker.
    2. Dump the black beans, Rotel, cumin, and garlic salt into a saucepan, bring to a light boil, and simmer while the rice cooks.
    3. If you have some cheese, lay it on!
