Spanish Tapas, or little dishes are so delicious and easy to prepare. Select some really good and affordable Spanish wines and it’s a party! These are some really good recipes I’ve made for our Spanish wines pairings classes over the years that you’re sure to enjoy preparing at home. We’ll have traditional Croquetas de Jamón Serrano (Serrano Ham Croquettes) with a Smoky Pimenton Sauce; Tostada de Seta (Bread with Mushroom and Aioli); Gambas al Aijillo (Shrimp in Garlic) and for dessert Torta de Santiago or Flourless Almond Cake.

This class menu offers some simply prepared dishes perfect for summer dinner parties. Most of the work can be planned and completed days before serving with little "last minute" cooking time . . . and the recipes are delicious! We’ll make a salad of Marinated Goat Cheese, Georgia Peach on Boston Bibb with Champagne Vinaigrette; Lemon Chicken with Scallions and Shallots over Pasta with Steamed Green Beans with Pecan Meuniére Sauce and Dark Chocolate and Fresh Bing Cherry in Filo Cups.

Let’s crank up the AC and celebrate the “Dog Days” of summer with some delicious “chilled” dishes featuring some of our fabulous local seafood! First we’ll make a Chilled Red Gazpacho with a garnish of Shrimp, Cucumber and Avocado; one of my all time favorite summer appetizers which I can make a meal out of New Orleans style Marinated Blue Crab Claws; Smokey Shrimp Salad Po Boys with Sliced Tomato and Black Sesame Crusted Seared Fresh Tuna and White Bean Salad over Arugula with Garlic Baguette. Let’s chill out and enjoy some delicious seafood!

We’ll start with Chicken and Corn Maque Choux (chicken thighs smothered in vegetables and fresh cut corn); Cajun Roux Peas with Andouille Sausage and Vidalia Onion Pie.

PLEASE NOTE OUR "WINE PAIRINGS" CLASSES ARE A BIT DIFFERENT FROM OUR DEMONSTRATION COOKING CLASSES IN THAT A LOT OF TIME IS SPENT ON THE WINES AND MOST OF THE DISHES ARE PREPARED THEREFORE THERE'S NOT A LOT OF ACTUAL COOKING.

HANDS ON BASIC KNIFE SKILLS $40

If you were going to take only one cooking class in your whole life...this should be the one! In this-hands on class you will learn all about the most important tool in your kitchen, your knife. You’ll learn how knives are made, how they should be handled, maintained and stored and most importantly how each style of knife should be used. You’ll receive hands on instruction on paring, boning, slicing, chopping, dicing and mincing. We’ll have various knives for you to use in class but it's important that you bring from home your 2 favorite knives; preferably a short blade and longer blade knife. We’ll make a Gazpacho and sandwiches out of all your hard work to enjoy.
