Is there a pitch at which the roof becomes significantly more costly or is there a gradual increase in cost? For example: cost difference between 8/12th vs 9/12th

Nope. The cost of a house is much more wrapped up in the interior finishes. Whether you use tile and hardwoods and granite: That is what pushes the over all costs.The framing and siding can differ in the general height, but not so much the slope of the roof. Don't over think this. Decide what you want, Talk to three different builders. Decide what you want to afford.

No. Pitch may limit what materials you can use, but a slight difference in slope will have a negligible change in cost.

But roof type can make a difference in insurance coverage. Hipped roofs are less costly than gables to insure.
