I eat them raw w/ smoked gouda and a glass of sauvignon blanc.

They are also very good baked in the oven - just thread them on a skewer and cook at 350 (with a drip plate on the rack below). This is good smeared on bread.

Renee makes a good preserve with honey to keep the sugar content down. Grandma Scooterbug loves it and she won't eat ANYTHING these days.

I'm thinking about trying to use stevia, don't really want to use splenda. Honey is great, but your blood sugar respond the same way as it does to sugar. Lisa, Twin Oaks is a good bet. If you check with them and they can't supply you with what you need, let me know. A lady in our office has some, but she cooks them down with sugar.

Wrap in thin sliced proscuitto and grill; also

I got'em. What's your fave way of eating them. Probably at least 20 pounds in this and had to leave a lot on the tree before the storm hits.

stuff with a little goat cheese prior to wrapping with the ham. Grill until ham is crispy and edges sizzled. Delicious.
