V Seagrove of Hotel Viridian recently expanded their dinner hours tobegin at 5 pm (instead of 6pm) with an ‘Early Eats’ Reveillonmenu from 5-6 pm and added lunches during the week. The Sunday brunch 11am-2pm features a full brunch & lunch menu, with an extensive variety of choices from appetizers to dessert. The restaurant was a dinner-only venue upon opening nearly two years ago,but now and running through the winter months into the 2013 spring tourist season and beyond you will see lunches offered Wednesday-Saturday, 11:30am – 2pm, in addition to the Sunday brunch. The brunch menu includes breakfast items including Banana Pecan Buttermilk Pancakes with Bananas Foster Syrup and theWagyu Brisket Montellenos with Toasted Tortillas and Tomatillo Salsa Verde with lunch items from the Gulf Coast Mac N’ Cheese to the signature V Burger. As the first featured amenity of Hotel Viridian, V Seagrove is now offers cooking classes led by Executive Chef David Cunningham in aseries featured each season; however, guests are invited to attend single classes. The first of three classes in his winter series was held on a Thursday in December specializing on the mother “sauces”with focus on variations of each. The usual format of the class is afull course menu demonstration accompanied by wine pairings with the featured cuisines and enjoying your specialized dinner at V with Chefover open discussion. The next class is scheduled for Thursday, January 24 followed by the final class in this series on Thursday February 7, available by reservation only 850.468.0973 (LimitedSeating; $60 per person)

Celebrate New Years Eve with V Seagrove on the deck or indoors with live music from the mysterious and infamous blues brothers during our Blues & Black Ties event December 31, 2012. Call 850.468.0973 to reserve your dinner seating, which begin at 5:00 pm that evening. The doors will be open for all to join and toast the New Year at midnight! Following the NYE festivities on January 1, V Seagrove will offer a Hangover Brunch from 11am – 4 pm prior to closing the doors for two weeks.

The restaurant will briefly close after the holidays for their off-season stretch from January 2-15, to reopen in time for the 30A Songwriters Festival on Wednesday, January 16. V will be closed for dinner on Sundays and fully on Mondays & Tuesdays until early March.
