1 cup finely chopped pecans
3/4 cup graham cracker crumbs
1/3 c. butter, melted
1/4 c. sugar
4-8oz. pkg. cream cheese (softened)
1 cup sugar
2 tsp. vanilla
4 eggs
3/4 c. sour cream
1 can pumpkin
cinnamon, allspice, nutmeg (about 1 tsp each) I add a tad more cinnamon
Combine pecans, cracker crumbs, butter and sugar. I use food processor. Mix well and press into 9" springform pan. Bake for 10-15 min at 350 degrees until just beginning to brown . Remove and set aside.
Combine cream cheese, sugar and vanilla and beat on high speed until creamy. Beat in eggs one at a time. Add sour cream and pumpkin and blend on low speed. Add spices and mix well.
Pour into crust and bake at 350 degrees for 60-70 min or until center is set. Turn off oven. Leave door slightly ajar and let cool in over for at least 1 hour. Remove from oven. Cool completely and chill for at least four hours.
