Rosemary Beach, FL – The wait is over for ticket holders participating in the “Rosemary Beach Uncorked” culinary event (www.rosemarybeachuncorked.com) as food and wine pairing menus are officially announced. This event takes place on Saturday, Oct. 22, from 1:00 to 5:00 p.m.

Gourmet food and wine pairings from restaurant participants will include:

Amavida Coffee (chocolate and wine and coffee pairings): John Kelly Semi-Sweet Chocolate & Caramel with Red Hawaiian Sea Salt (paired with Evodia Old Vine Grenache or Semi-Washed Organic Coffee, Sumatra PPKO Cooperative); Dark Chocolate with French Grey Sea Salt (paired with Heron Pinot Noir or Washed Organic Coffee, Bolivia FECAFEB Cooperative); Poco Dolce Bitter Sweet Tiles (paired with Luzon Verde Jumilla or Washed Organic Coffee, Oromia Sidama Cooperative); Poco Dolce Super Chile Toffee Squares (paired with Malbec Orzada, Odfjell Vineyards or Processed Organic Coffee, Ethiopia SCFCU Cooperative)

Cowgirl Kitchen (food and wine pairings): Wild Mushroom Pizza (paired with Domaine Du Gros Nore Bandol Rose and Martinelli Bella Vigna Pinot Noir); Pulled Pork Enchiladas with Red Chili Sauce (paired with Nora Albarino and Elyse Morisoli Vineyard Zinfandel); Blue Cheese Mousse Parfait (paired with Martinelli Zio Tony Chardonnay and Black Slate Priorat Gratallops)

La Crema Tapas & Chocolate (food and wine pairings): Crab Tartlets with Roasted Piquillo Remoulade (paired with 2009 La Cana Albarino); Croquettes Filled with Ham and Cheese (paired with 2008 Cellar Can Blau Monsant); Mini Spinach and Pine Nut Pizza (paired with 2010 Muga Rosado Rose); Orange Pork with Caramelized Onions (paired with 2009 Shaya Verdejo); Crisp Baguette with Sweet Cream Cheese & Strawberry Marmalade (paired with 2009 Alto Moncayo Veraton Garnacha); Chocolate Dipped Bacon (paired with 2008 Bodegas Triton Tempranillo Castilla y Leon)

Onano Neighborhood Café (food and wine pairings): Scallop Crudo (paired with 2010 La Vis Pinot Grigio Dipinti); Braised Short Rib Crostini (paired with 2007 Fattoria di Lucignano Chianti and 2009 Dreyer Sonoma Cabernet Sauvignon); Wild Mushroom Ravioli (paired with 2002 Z’ivo Pinot Noir)

Restaurant Paradis (food and wine pairings): Lump Crab Stuffed Baked Mushrooms with Sherry Goat Cheese (paired with Caymus Conundrum and Luna Pinot Grigio); Sushi Grade Tuna Tartar with Key Lime Ponzu and Sushi Rice (paired with Caymus Mer Soleil Silver Chardonnay and Decoy Sauvignon Blanc); Strawberry Balsamic Glazed Beef Tenderloin Kabobs (paired with Belle Gloss Meomi Pinot Noir and Saintsbury Carneros Garnet Pinot Noir)

Summer Kitchen (food and wine pairings): Florida Rock Shrimp Ceviche (paired with Tobin James Chardonnay and Momo Sauvignon Blanc); Strube Ranch Kobe Sliders with White Cheddar and Chipotle Ketchup (paired with Summers Estate Merlot and Zolo Malbec); Mini Pizza with Marinated Tomatoes and Mozzarella (paired with Summers Estate Charbono and Dr. Loosen Bros. Riesling)

Wild Olives Market/Deli/Bakery (food and wine pairings): Bresaola with Cucumber Salsa (paired with Sebastiani Secola Red and Clifford Bay Pinot Noir); Spanish Cheese Board: Manchego, Mahon and Cabrelas with Honey Combs, Figs and Marcona Almonds (paired with Chalk Hill Estates Red and Lincourt Chardonnay); Shrimp Ceviche (paired with Chalk Hill Sauvignon Blanc and Curtis Viognier)

Guests of the Rosemary Beach Cottage Rental Company who make a two-night reservation will receive a third night free, and guests making a three-night reservation will receive a pair of free “Uncorked” event tickets, a $150 value. In addition, all guests of the Cottage Rental Company attending the “Uncorked” event will receive a free commemorative “Uncorked” Riedel wine glass and pouch. Complimentary access to exclusive wine pairing demonstrations at participating Rosemary Beach restaurants, access to the Fitness Center and Racquet Club tennis facilities, and unlimited DVD rentals round out the lodging specials.
