Spring is Here!

Who makes the best mojitos here locally? I had one recently that was too sickeningly sweet - any tips? they are amongst my favorite drinks...

My husband!
This is the closest I could find to how he makes a mojito:
Single Serving Mojito
1 jigger light rum

handful mint leaves

1/2 lime (Adjust for taste.)

2T simple syrup (simple syrup is one cup of water and two cups of sugar brought to a boil in a saucepan, stirred until the sugar disolves, and cooled)

splash o club soda

Muddle mint, lime, & sugar in a highball and top with ice. Then, add rum & a splash of club soda. Voila!

Note that measurements will become less precise as the evening wears on.

Spring is definitely here. The birds are nesting, the dolphins frolicking, the kids are playing baseball.

Thanks Cil! My mint is starting to poke up through the ground here and there. Like wisteria, it has a life (and mind) of it's own.

It is early, and my eyes were playing tricks on me when I was reading about the "frolicking" dolphins. I thought you had written something else - and I about fell out of my chair!

OMG...the best drink !!!!! Perfect recipe...same one I have! Perfect beach drink too!! Jen-ay bring your mint in JUNE!!!! These take lots of mint

We broke a record here yesterday...93 degrees. A bit cooler today. Those giant lace bugs (look like daddy long legs) have started flying in the house. My duck couple that laid eggs by the pool have been back scouting out the area. I would love to have them again, but the pool has a cover and they walk around on it looking for the water. They usually end up in the spa. Molly probably will not allow this.
