723 Whiskey Bravo Takes Off With New Chef & Expanded Menu

Longtime fans of 723 Whiskey Bravo in Seagrove Beach can look forward to meeting new Chef Margaret LaVetty, aka “Chef M” beginning Dec. 26, 2019.
She is poised and ready to share her extensive cooking experience with existing SoWal patrons and visitors. A native New Yorker, she is a graduate of San Francisco’s California Culinary Academy and most recently served as Executive Chef for Barcelona Wine Bar in Nashville. She’s been “around the block” having worked in New York City, San Francisco, and Miami as well as opening and operating Bowl of Granola in St. Pete.
723 Whiskey Bravo owners Skip and Victoria Moore went through an extensive search process to find the right chef for their restaurant. Although 723 Whiskey Bravo has been a very popular area restaurant for eight years now, the Moore’s felt it was time to tune it up a notch.
“We spent three months looking for the ‘just right’ person and Chef M just has a passion for food and the restaurant industry that is just “off the top,” says Victoria. "She really wants Whiskey Bravo to be a guest-driven restaurant, not a chef-driven one. We feel like we’ve hit a homerun with her. She works ‘eight to faint’ and we’re looking forward to working with her.”
Chef M will continue Whiskey Bravo’s emphasis on Casual, Coastal Cuisine, but she will be doing a whimsical play on some classic dishes.
Whiskey Bravo has always had a burger on the menu, but we will be installing a Colossal Wasabi Burger (an 8 oz. burger with a brioche bun and gigantic wasabi-crusted onion rings and jalapeno ketchup; and our Chicken Wings will be roasted and grilled with a Kentucky bourbon glaze. The Victoria Salad will remain and consists of Fuji apples, cranberry, goat cheese, spiced almonds and champagne vinaigrette topped with a sirloin beach patty.
Some New menu items include Lobster Beignets, Fresh Local Grouper, Diver Scallops, Slow Braised Pork Shank with Cheesy Grits, and much, much more!
“We will operate a totally scratch kitchen right down to the bread and desserts… everything will be made from scratch,” Chef M says.
Currently, Brunch is served on Saturday and Sunday. Beginning January 26th it will be only on Sunday and Chef M will be launching a new Brunch Menu that she can’t wait to introduce.
Some of the new brunch items include a Guava Cream Cheese French Toast; a Green Eggs in Ham (smoked pork chops with poached eggs and pesto hollandaise; a Big Phat Greek Omelet (Artichoke, Roasted Peppers, Red Onion, Olive Tapenade & Grilled Pita); and of course, The Hangover (Char-grilled N.Y. Strip, Over Easy Eggs, Texas Toast, and Fresh Fruit. Brunch will be served from 11 a.m.-3 p.m. Beginning Jan. 26, Brunch will only be served on Sundays.
No brunch menu would be worth its weight without Mimosa’s and Bloody Mary’s, and Chef M’s Bloody Mary rendition includes the addition of fresh horseradish, blackened shrimp, olives, and Worcestershire sauce. This Bloody Mary could substitute for breakfast, but don’t stop there.
The NEW BAR Menu will feature Ahi Tuna Nachos, Chef’s Flatbread, Grilled Chicken Sliders and Creole Scramble along with existing Bravo standards.
“We are talking about instituting a Bloody Mary Bar when we get back in season,” says Chef M.
SoWal Insider Tip: The countdown is on and 723 Whiskey Bravo will ring in the new year with their New Year’s Eve Four Course Prix Fixe Menu priced at $119/person. Chef M’s delicious dinner includes a complimentary glass of bubbles and cigar on The Roof where you’ll be able to see the Seaside firework show at 9 p.m. A photo booth will be in play to document your memorable New Year’s Eve moment. The First Course of the Menu will include a choice of: Tempura Lobster with Tangerine Ponzu Sauce; a Char-Grilled Skirt Steak Lollipops with Maple-Red Curry Sauce; a Stuffed Cremini Mushrooms with Pine Nuts; or a Whipped Ricotta and Tarragon. Second through Fourth Course selections are equally as enticing, and all will serve as an excellent preview for Chef M’s culinary genius.
