Rocky Mountain Cowboy Balls:
Start with some balls, cut off of a Steer. You may want to leave that part up to the professionals. Dust the balls in a mixture of half cornmeal and half seasoned flour. Dip balls into and egg wash, then re-coat in cornmeal and flour mixture. Lightly place into a deep fryer of very hot oil. Cook until nice and golden brown. Place balls onto paper towels to drain. Serve with your choice of dipping sauce.

I believe it is a bull in the making of a steer. If someone was trying to cut off your privates, you'd curl your tail up as much as you could, hence the guy holding the tail out of the way.
