Each evening is a tribute to a legendary culinary mind, brought to life through thoughtfully curated menus by Executive Chef Fleetwood Covington, inspired by years of studying the techniques, philosophy, and artistry of these masters.

Each course will be paired with wines selected to complement both the cuisine and the spirit of the chef being celebrated.

A tribute to Charlie Trotter, the pioneering force behind Chicago’s iconic Charlie Trotter’s. This menu channels his fearless seasonal creativity, vegetable-forward philosophy, and belief that every plate should tell a complete story.
