I'm looking for a "good" soup recipe. Preferably something with chicken, but after that, the sky's the limit. I found a recipe I thought I might try for a chicken/broccoli/cheese tortellini concoction, but I thought I'd draw from the pool of chefs on Sowal as well. Any ideas? Any family favorites? :idontno:

Recently I had a terrific Greek chicken and rice soup with lemon at the Aegean Restaurant in Shalimar.
My sister and I loved it. We THINK the recipe is as follows
Chicken stock 1 box
cooked chicken pieces, cut into bite sized pieces
1/4 - 1/3 Cup uncooked white rice
half a lemon juice maybe?
garlic, salt, white pepper to taste
4 eggs (beat them, add hot stock to eggs first then add eggs to soup, VIP)
and another herb we could not identify, like cilantro or ???
Then prepare as you would any soup, heat stock, add chicken, rice seasonings, eggs with stock and simmer gently until rice is done
Anyway, the most important thing is adding the stock to the beaten eggs BEFORE adding them to the soup; that way the eggs don't cook like they do in egg-drop soup.
It was light, rich and very tasty....try it. My days/nights off are thei Wed/Thurs so I intend to try it then, will let you know how mine turns out

This is Sarawind's recipe- it is yummy! If we ever get "soup weather" here again,I will be making it!It's been snowing and sleeting outside :yikes:, so I just went to the store and got the ingredients for Sarawind's soup. Didn't have time for a crock pot, so I sauteed the onions and garlic and then added the rest of the stuff. Now it'll simmer until hubby gets home. It does look yummy!
CROCK POT CHICKEN TORTILLA SOUP
SoWal Guide
Here's a really simple Chicken Tortilla Soup:
1 (16 oz.) can fat-free refried beans
1 (14 oz.) can fat-free chicken broth
1 (11oz.) can whole kernel corn with liquid
1 (15 1/2 oz.) can black beans, rinsed and drained
1 cup chicken breasts, cooked and chopped
1 onion, chopped
1 cup chunky salsa (mild, medium or hot)
1 small can mild or spicy green chilies
Combine all ingredients and bring to a boil. Simmer for about half an hour or more, stirring occasionally. Top with sour cream, cheese, tortilla chips, etc.
I always double or triple the recipe to make a large pot of this. The hardest part is to cook the chicken so you could go even simpler and get a deli chicken.
thank you suncat, this looks perfect! soup should be simple.

Only change I made was adding one more can of black beans because I love black beans. Thanks, Sarawind. I will definitely use this recipe again.

okay you sowallers, I'm sharing my mom's beef and vegetable soup. this is so delicious with hot southern cornbread slathered with butter. this is a "complete comfort food". and easy.
2 lbs. ground round
1 chopped onion (sweet)
1 heart of celery, chopped
1 large can Hunts whole tomatoes, pureed
1 1/2 large can water
1 cup frozen lima beans
1 cup frozen cut okra
1 cup frozen white shoepeg corn
1 cup frozen peas (blackeyed, pinkeyed, crowder, or any other)
1 hot pepper ( not necessary) I like the skinny green hot peppers, but you can use jalapeno.
Salt and pepper (Don't under or overdo)
Brown meat with onions and celery. Then add tomatoes and water. Then add veggies. (You can take the pepper out at any time, if it's getting too hot for your family.
Bring soup to a boil and then cut heat to a low heat, but still a very light boil. Cook till and veggies are done. I like to cook mine about an hour and a half. Good luck.

Here is a pretty good White Chicken Chili recipe:
4 cups cooked chicken breast meat (I sautee cut up breast meat in olive oil, but in a pinch, and to make it easy, you can use frozen or refrigerated fajita chicken, chopped)
2 16oz cans great northern beans
1 can cannellini beans
2 4oz cans chopped green chilis
4 cups chicken broth ( I also, will sometimes, use knorr chicken cubes instead)
2 cups 1/2 & 1/2
1/2 cup white wine (or more)
1 tsp ground cumin
1 tsp oregano
dash cayenne
3 cups grated monterey jack cheese
In a large stock pot put all the ingredients except cheese. Heat until steaming. Add the cheese until melted and serve!
any of these ingredients are optional. sauteeing onion & garlic before adding ingredients would be good as well.
This is really good on a cold night or day with corn bread and a salad.
