We joined a food co-op this year and are the proud owners of many yellow squashes, a very lewd looking zucchini and other squash/gourd type things that I can't identify. I have a squash casserole recipe that I have made a couple of times and I have ambitions of parboiling/freezing some of the squash.
What do you do with your bounty of squash?

Stir fry it with olive oil, onion, and black pepper. Or shred it in the food processor and add it to everything - soup, omelet, bread, and spaghetti sauce.

I washed and chopped mine and plan to throw it into soups. I love it fresh sliced with onion and grilled with a little seasoned salt or sauteed together. It's great in asian stir fry, too!

Cheese and Sausage Stuffed Zucchini
12 oz pork sausage
1 large zucchini
3 eggs, beaten
1 cup shredded Colby Cheese
2 cups Ricotta Cheese
1 ? cups shredded Italian Blend Cheese
? cup chopped onion
2 tablespoons Italian seasoning
? teaspoon salt
? tsp ground black pepper
1 pinch garlic salt
? cup chopped tomatoes

Crumble and brown sausage in skillet ? drain and set aside.

Partially cook zucchini in microwave on high for 5 minutes. Remove and let cool 10 minutes.

Combine eggs, cheese, onion and seasonings in large bowl.

Slice zucchini in half lengthwise, remove seeds and rinse. Place in baking dish and sprinkle with garlic salt. Layer the sausage, tomatoes and cheese mixture in each half.

Bake at 350 for 40 minutes. Then broil for 5 minutes to brown the cheese.

Notes: I only used 2 eggs.
I baked leftover stuffing in a casserole dish. Yummy on bread or crackers.

Stir fry and on kabobs. My MIL was known to make squash pie from time to time. It was very good!

Roast cubed zucchini, yellow squash, and onions with olive oil. Sprinkle with sea salt and pepper. Splash with balsamic vinegar when finished. I also have a great zucchini bread recipe. I slice zucchini length wise, spray with olive oil, sprinkle with italian herbs and grill. One of my family's favorite sides!

We have a huge supply of both yellow squash and zucchini from the garden this year. One of my fav ways to cook it is to slice into thick rounds and then marinate in your fav. dressing and grill. It's wonderful grated-then add a bit of salt, let sit for 20 min or so then squeeze really dry. Add some grated onion, pepper and shape into a patty and saute in a bit of olive oil.. Squash or zucchini pie is another option and also very good. To freeze all you have to do is grate or cube and freeze. Can be added to lots of things like soups, breads, sauces and stir frys, We love them grilled with peppers and onions and put into a wrap as well. Good luck!

Cut long in half, brush on a little olive oil and pepper, place on grill for a few minutes and voila! Yummy, quick and easy!

Chop squash into bitesize pieces....same with onion...place in steamer over about 1.5 inches of water....lots of pepper and butter on top, toss...put steamer cover on....doesn't take too long. I love it this way. Southern steamed down to soft goodness. Yum.

I just had squash casserole tonight, Take 4 or 5 yellow squash , I onion, 2 T butter, 1/4 cup cheese, 10 saltines crushed and 1 egg. Boil sliced squash, and chopped onion in salted water for about 15 min. Drain and smash. Add butter, cheese, saltine crackers and egg. Stir and bake at 350 for 25 min. This is the way my mother and grandmother cooked squash.

I found this one on-line in the Trisha Yearwood cookbook. She uses Ritz crackers- I have been adding breadcrumbs. My DH thinks it tastes kind of like green bean casserole.
