and post any tips you have, for today I'm making the gnocchi to go in the chicken and gnocchi soup. Never made it before, but I couldn't find it at the store...ugh...and I thought, "hail, I can make dumplings, I can make pie crust, I can make just about anything dough related, so surely I can do this."

I do find, however, that there are about 50 million recipes and opinions on the best ingredients, methods, etc.

So....potato or ricotta? Hmmmmm..........

There is always a first time. If not perfect now, then next time. Good luck.

Sounds so good. Share the recipe!! I made gnocchi once with my class when we read a story about it. We had the best cafeteria staff that helped us make anything. The children loved it!

It was simple. 1 pt. ricotta
1 c. freshly shredded parm
1 egg
1 c. flour (i used less in the dough and the rest of the 1c. to flour the board).

Mix egg into cheeses, add flour to get a rather sticky consistency. Take heaping tablespoons of dough and roll into finger size rolls. Cut with knife dipped in flour into 1 inch "pillows". Drop into boiling salt water. When they float, they're done! :D

Next time, I'll tackle the potato kind.

Awesome that you tried this, DD! Impressive.

I've made homemade ravioli, but never gnocchi. Sounds yummy.
