My Aunt made a cake called a whipped peppermint cake--its essentially a white cake with simple buttercream icing, except you finely crush dozens of peppermint candies and then puree it into the icing and spread on the cake--absolutely delicious with hot chocolate! She is going to email my mom the recipe and I will post.

Please do post this! I've got to make that cake. I looked for peppermint icecream here (one of my holiday faves) but did not find it.

Sounds like a lovely cake...our daughter-in-law made peppermint chocolate bark this Christmas...dark bittersweet chocolate melted with fairly fine "chunks" of peppermint throughout...Yum!

Hello everyone! I haven't forgotten to post the recipe--but my dear Aunt seems to have forgotten to email it. Nevertheless, my mom says that all it is, is a simple white cake, with simple buttercream icing. Crush the peppermints to a fine sugar like consistency and place in a blender and puree for an even finer consistency, then mix well with the buttercream icing. Try this and see how it comes out, and I promise I will get that recipe on here as soon as she emails it to my mom.
Have a Happy New Year.

Do you have peppermint stick icecream, Peapod? Mmmmmm.
Thanks, Bsmart, I am sure I can figure out how to do it. I don't have any of my regular cookware but I can manage. It just sounds so pretty and festive.
