Here are some of my garden pics taken yesterday. To date, everything seems to be growing well. However, you never know when it can all end suddenly.

SJ- here is a recipe made for that eggplant in your avatar! Bdarg does not like eggplant, so I don't know if i will be trying this one anytime soon. :( If you are an eggplant eater and make this, please let me know if it is good!
From the June 2006 issue of Cooking Light magazine--
Grilled Ratatouille
1 medium peeled eggplant, halved lengthwise (about 1 pound)
1 teaspoon kosher salt, divided
2 medium zucchini, halved lengthwise
1 medium red bell pepper, halved lengthwise
1 medium green bell pepper, halved lengthwise
1 medium red onion, quartered
Cooking spray
1 cup diced plum tomato (about 2)
1 tablespoon extravirgin olive oil
2 teaspoons herbes de Provence
1/4 teaspoon freshly ground black pepper
1 garlic clove, minced
Sprinkle cut sides of eggplant with 3/4 teaspoon salt. Let drain 1 hour. Rinse well; pat dry with paper towels.
Prepare grill.
Coat eggplant, zucchini, bell peppers, and onion with cooking spray. Place vegetables on a grill rack coated with cooking spray; grill 5 minutes on each side or until tender. Cool. Coarsely chop vegetables, and place in a large bowl. Stir in remaining 1/4 teaspoon salt, tomatoes, and remaining ingredients, stirring until blended.
Yield: 8 servings (serving size: 1/2 cup)

SJ...have you eaten any fruits of your labor yet?

SJ...have you eaten any fruits of your labor yet?You didn't hear Kurt bragging about the good tasting tomatoes, did you? I just couldn't resist making some Mexican food last week. I have many Basil plants and have been using them almost daily. Tomatoes are looking great, but are starting to get eaten by critters, so I am on a daily killing spree. Zuchinni should be ready to eat soon. Sugar Snaps are tasty. Green Beans are slow growing - I have only two beans thus far. Plenty of tasty Cayenne Peppers and they are HOT! Something uprooted one of my Squash plants so now I am counting on the one. Cucumber vine is still growing, but no Cucumbers yet. Cilantro is doing very well as are the mixed greens. Spinach is not doing as well.

It seems like it was only yesterday SJ had tiny little green tomatoes, now they are being eaten. Hooray! :clap_1:

 My boss brought the first ripe tomato from her garden to our work. Needless to say, it got quite a bit of attention as it had a tiny appendage attached. Now, I am sure people will know what I am referring to! We had a little more fun with it before eating it at lunch. One of the ladies in our office cut the bendable end of a drinking straw off and put it over it! Too funny! Wish I would have had my digital camera with me!
