Sounds good, I love the occasional PM breakfast! Our favorite "breakfast for supper" is migas. Fry up some corn tortillas till they are nice & crispy & add Rotel & cheese, YUM!!

my favorite is biscuits and sausage gravy but that's way too much trouble and I'm not as good at making it as my momma or grandmother!

How funny that you posted this. Last night I made veggie omelets for dinner last night! Too dang hot to turn on the oven or grill outside!

We used to do this when Dad was out of town (he was not a fan of breakfast for dinner) - usually scrambled eggs or an omelet. Fried eggs on hashbrowns is good too.
