Here are my thoughts, for whatever they're worth -

Ft Walton Beach is a long way from Seaside - depending on traffic, 30 minutes to one hour, each way. Also, the farther west you go, the more hurricane related problems.
Closer to Seaside, there's Sandestin, with a huge variety of accomodations, from gulf front condos to bay front homes and everything in between. (sandestin.com)
I'm not sure what your budget is, but One Seagrove Place (the High Rise) in Seagrove has units from $175 to $219 per night in April - depending on when. Their website is oneseagroveplace.com. There are many other options along 30A, but Seagrove Place might be the easiest and would suit your various guests for gulf front, no stairs, etc.
If those don't work, Panama City Beach is closer than Ft Walton Beach and the beaches are in great shape there. The construction that you'd see there is of the 16,000 plus condo units currently being built there.
