Good question. No answer. I don't know, either.
braised veal shank. They cut the leg bone in horizontal slices, and there is lots of flavor in the bones, and it is filled with marrow, with a bit of meat on the outside.
here is a google image of some osso buco. This is traditionally how I've seen it served.
And here is something to help get at the marrow. Slurp!
