When in doubt...heat a vat of peanut oil to 350 degrees, insert duck and fry about 2-3 minutes per pound. Drain and enjoy:wave:

Just for the record that doesn't for chickens at all. :puke:
I hope ducks fare better!

There was a yummy looking recipe in Bon Appetit several months ago for a grilled duck w/ plum halves.

Are you looking for a whole duck or just a duck breast recipe?

EASY DUCK ALA ORANGE
2 wild ducks
4 strips bacon
1 c. beef bouillon
1 c. orange juice
2/3 c. dark brown sugar
Grated rind of 1 orange

Put ducks in crock pot. Spread bacon strips over them. Mix bouillon, juice, rind and sugar. Pour over duck. Cook on low for 8 hours. Pour juice in pan. Remove duck from bone. Thicken juice with 4 tablespoons cornstarch mixed with 1/4 cup water. Simmer until thick. Add meat.

brine it overnight, 12-24 hours in brown sugar, kosher salt, garlic cloves (smashed) and fresh thyme in just enough water to cover. take it out of the brine and let it dry in the refridgerator for about 3 hours. take it out of the fridge, let it come to room temperature season with kosher salt, pepper and a touch of cajun seasoning. Cook it in the oven, on a roasting rack on low 250ish for about 2 hours, breast up. Crank the temp up to about 400 for 15-20 minutes to let it crisp up then let it rest for 15 minutes, carve and enjoy...duck a la simple.;-)

yummy, thanks! I haven't brined a duck before. May have to give it a try.

Because it's such a fatty meat, the trick with duck is not to let it get too moist while it's sitting in the fridge waiting for you to cook it. Get rid of the plastic wrap, dry it with a paper towel and cover it loosely before you refrigerate it. It needs to be perfectly dry before it goes into the oven if you like the skin crisp. I have a GREAT roast duck with sour cherry sauce recipe if you're interested...
