Part A) best sushi in the winter (next week) on 30-a? opinions, facts, experiences - any answers are appreciated

Part B) What in the hell comes out of the boats in Destin, that's unfit for sushi apparently?? Detail/Compare/Species

Part C) What comes freshly off those same boats that is fit for Sushi consumption, but unfortunately is not currently really used at The Beach? Detail/Compare/Species - Is there any hamachi or red tuna [species name?] out there some suitable and tasty species of tuna or ANYTHING from the worlds best or biggest or whateverist fishing village that ought to be featured or someday might be featured in the area' sushi bars, or are we just doomed to UPS'ed in Tuna from the far east, while we eat sushi in the harbor of the worlds best fishing village????????

Part D )Is there anyway 30-a can put their own unique stamp on the Sushi scene by starting to feature a native species that is great for sushi, sustainable of course?

Old Florida Fish House. Hands down the best, it's Yoshi's staff that she trained and I've never experienced anything bad. She's brought out some, initially, very weird things, but after I ate it I was hooked.

Have fun and just stay away from the regular Fish House menu you'll be fine.

I have found no great Hamachi (yellowtail or Japanese Amberjack) down here except at Basmati's (excellent sushi), and have had none anywhere else since leaving Los Angeles. the amberjack from the Gulf is not sushi grade. Someone tried to pawn snapper off to me as yellowtail once...eewww.

SWGB, does OFFH have good yellowtail Hamachi? I've never eaten there. I'm still protesting the great Mexican place being kicked out. Maybe it's time for me to get over myself on this one. Is Yoshi the sushi chef that used to be at Harbor Docks when their sushi was worth a $#!t?

There are several kinds of tuna that are good for sushi (maguro or bluefin tuna is best), but none are caught around here in abundance. They're deep sea fish caught with specialized boats and rigs.

It's called the world's luckiest fishing village, and there are many other types of fish that are specialized in. Several species of snapper, grouper, amberjack, triggerfish, ahi tuna, mahi... and great shrimp (try royal reds some time)...we just don't specialize in sushi fish. Most sushi fish come from the Pacific.

Not sure on the Hamachi, but if it's on the menu then it's up to Yoshi's standards.

Yes, she is from Harbor Docks.

Harbor Docks still rocks. It is not only delicious but the sushi chefs are fun and engaging and the price is definitely right.

It's no secret -- Great sushi is difficult to find around here, and locally caught fish is about as difficult to find, unless it is on the end of your fishin' pole.

Basmati's does have some good stuff, and OFFH has a wide variety of rolls that are tasty. To me, a roll is like a Margarita, you don't need the mix if the tequila is excellent. I have yet to eat any sushi around here which rates (on my scale) with some of the finer sushi places in big cities like Atlanta, where they might overnight ship the fresh fish in from all over the world.

I haven't found anyplace to help me with my craving for hamachi (sashimi). So I buy it from Fresh Market and I eat it at home with wasabi paste and soy sauce. YUM!

Fresh Market is the only place I know of that sells sashimi. It is flash frozen on the boats just after they catch it. This is what I am told.
