I have a really easy one that we have at least twice a month.

Black Beans and Brown Rice

Cook a cup of brown rice according to package directions.

While that's cooking, warm up two cans of Progresso black beans and one can of "Mexican" tomatoes. I like to add some cumin and garlic salt. If you have some fresh cilantro, all the better. Add the cilantro to the beans and use it for garnish.

Wala!

Black-Eyed Pea Salsa

2 cans black eyed peas with jalapenos
2 cans field snap peas
1 8 oz. bottle light italian dressing
3 avocados
3 roma tomatoes
1/2 red onion
garlic
fresh jalapeno

Serve with tortilla chips/scoops

**Not sure if this meets all the vegan criteria, but you could probably use organic brands/etc.

Let me think on this  ...I cooked for a vegan in the sorority house for a whole year. It was a very interesting experience, and I learned alot!
Of course....a nice pasta salad ...you just can't beat that, with lots of tasty veggies and maybe some walnuts thrown in? Or pine nuts???

It meets them all...provided the dressing contains no animal products what so ever... and the canned field snap peas could contain animal product, as well as the black eyed peas...you might have to cook them yourself to ensure no animal products

OOPS! You might not want something warm. Try this. If you're an ovo-lacto vegan, just leave out the cheese.

Recipe Title: Southwestern Spaghetti
Recipe Category: Pasta

1 (16 ounce) can Progresso peeled tomatoes, or 3 medium home-grown tomatoes
2 tablespoons olive oil
3 cloves garlic, minced
2 teaspoons minced jalape?os
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
2 teaspoons chili powder
? teaspoon cumin
? teaspoon salt
? teaspoon white pepper
9 ounces fresh linguine, cooked
3 ounces goat cheese or shredded Monterrey jack cheese
3 tablespoons pignolia nuts

Drain and chop tomatoes, reserving half of the juice. Combine tomatoes, reserved juice, olive oil, garlic, jalape?os, cilantro, lime juice, chili powder, cumin, salt, and pepper in a non-reactive bowl; mix well. Let stand at room temperature for one hour or more.

Spoon warm pasta onto serving plates. Top with the sauce. Sprinkle with the cheese and pine nuts.

Yeah, I checked after posting. There are several brands of dressing with no animal fats. And, I'm sure there's probably some brand of the snap peas available without animal products. Sent this to Cork too, since she liked it.

Mmm, this sounds similar to what I made last night.
I used some maters from the garden, but I also added canned tomatoes diced that they sell in the Spanish food aisle, Goya. It already had spices in it.

Not all pasta..you have to check the box...plus it has to be organic and whole wheat

Again, isn't pasta made with eggs? When I make pasta, I use 1# flour, 5 eggs, a bit of olive oil. Is there another way of making eggless pasta?

This is a modified version of a recipe in the Atlanta Junior League's cookbook, "True Grits."

Yeah, the Goya products' section is getting bigger and bigger at our Publix. I saw a report that said that more salsa is sold at grocery stores than ketchup. No surprise. I didn't even know what salsa was until well into my adulthood.

Vegan means no animal products. Cheese and gelatin are made from animals. Not sure about the cool whip, but probably has dairy. When I say, "summer's day," I mean that it is hot, so fruit would be great. I am thinking salads, since they don't warm you up with high calories.

Key note for cooking vegan...READ the ingredients!!! Most products contain animal products!!!! To ensure a true vegan diet...make everything fresh and make it yourself. I cooked a whole year this way...believe me, I know!

Vegan doesn't require that it be organic and whole grain, does it? I thought vegan mean no animal products or bi-products. Am I totally missing something here?:idontno:

Goya O'boya......love it. :D
I love their coconut soda and they have pineapple too.
Sometimes I mix together and make a pina colada soda.

SJ, I would imagine "For the Health of It" in BMB could give you lots of ideas that are for purist vegans?

If you want to make your own pasta...there is a product that is an egg substitute. It is a powder you mix with water or soy milk. I made many a crepe for Caroline using this product...filling it with blueberries and tofu cream cheese

That's why I mentioned ovo-lacto. Hell, I dunno what you do about pasta if you're ovo-lacto. (I mean, SJ, what do you eat at Borago if you're ovo-lacto?) Actually I think that my pasta machine recipe book has a recipe with no eggs or milk.

The vegan that I cooked for had specific requirements...mostly organic AND whole wheat...which is HEALTHIER...ergo VEGAN mentality..HEALTHY
