Seeing Red Wine Festival is sold out for the main wine festival events. But you can still reserve a spot for Celebration of Bubbles - just announced - with a new location. The final day of Seeing Red Wine Festival is usually a brunch held at Great Southern Cafe. This year, Chef Jim Shirley will still host the champagne brunch but it will take place at Seaside Lyceum.

Finish your weekend of great food and wine at the Seeing Red Wine Festival with the Celebration of Bubbles hosted by Chef Jim Shirley in the Seaside Lyceum. This sparkling event will be held on November 12, 2017 in the Seaside Lyceum from 12-2pm.

Two hours of sampling sparkling wines from around the world, perfectly paired with a walkabout brunch. A portion of the proceeds will go to the Seaside School Foundation.

Nationally recognized restaurateur Chef Jim Shirley is owner of the Great Southern Café, 45 Central, and The Meltdown on 30A in Seaside, Florida, The Bay in Santa Rosa Beach, Florida, and Baytowne Provisions in Destin, Florida. He is also the co-owner of Great Southern Restaurants, which owns The Fish House, The Atlas Oyster House, and The Fish House Deck Bar in Pensacola, Florida.

Chef Jim uses Southern accents with great skill and spirit, traveling far afield to graze and glean, absorb culinary ideas, select fine wines, and look for pockets of sustainable farming practices. As a Pensacola native, Chef Jim uses his knowledge of local waters and his families’ farming histories to promote “New Ruralism,” a movement to champion sustainable agriculture at the urban edge.

MUMM NAPA BRUT ROSE
Signature Rosé has an eye-catching pink, coral color, robust red fruit flavors, with Pinot Noir being responsible for the wine’s soft texture and Chardonnay contributing structure and elegance.

CHARLES ARMAND BRUT BLANC DE BLANCS
The golden color of this Blanc de Blancs and its delicate bubbles highlight the finesse of its effervescence, with notes of yellow fruit, peach and apricot.

ZARDETTO PRIVATE CUVEE
With brilliant straw-yellow color, this sparkler expresses notes of pears, apples and peaches with a hint of wild flowers.

PERELADA CAVA
This Cava is made with wine of the three typical Cava varieties: Macabeo, Xarello, and Perelada. This is a classic Cava is made according to the traditional method with utmost rigor and care characteristic of Perelada.

BLOOD ORANGE MIMOSA
Blood Orange Mimosa is a wine cocktail made from wine and the juice and pulp of the celebrated crimson-fleshed Sicilian blood oranges. The finest cultivars are orchestrated to achieve the best combination of flavors.

CHANDON BLANC NOIR
This Carneros-designated Blanc de Noir has a delicate copper color and fruit aromas of strawberry and cherry overlaid with warm cocoa from pinot noir. Its softer cousin Pinot Meunier contributes a warm spice, with overtones of orange peel and freshly baked bread.
