Is anyone else canning this summer? I'm taking a break from snapping beans right now. I also have tomatoes and pickles (dill) to put up today and tomorrow.
I also am looking for a good salsa recipe! :wave:

Did some refrigerator pickles about 5 days ago, garlic dill.....they came out wonderful. I have a large bowl full of figs and I am looking for a non-sugar preserves recipe. Any ideas? I don't want to use artificial sweetener either. Is suger the preservative?

Canning salsa...that's a good idea. Check the internet recipe sites. Allrecipes.com is a good one.

I've never done figs ,but my friend was telling me last night about strawberry figs. You use strawberry jello . I'll ask her bout the suger thingy.
I want your recipe for the garlic dill pickles!

Have you ever tried frozen strawberry jam? I need to find the recipe. It is too good!

Strawberry Fig jelly is so friggin good!!! This is one of the many things my mom makes and its out of this world!!!

Here's our fire grilled salsa recipe:

2 large cans of whole tomatoes drained (liquid reserved) or 3-5lbs peeled home grown tomotoes
1 small onion sliced into chunks
1 green bell pepper chunked
2-4 jalapeno peppers
2 clove garlic
2 limes (or a grapefruit)
1-2 small cans tomato sauce as needed and preferred
fresh cilantro
salt and pepper

Grill tomatoes, onion, and peppers over charcoal (much much better than gas grill)

In a food processor, process the tomatoes, onion, peppers, fresh garlic and juice of one lime (or grapefruit), and desired amount of cilantro (I'd go with about 1/4 of a bunch as I don't like too much cilantro myself).

Give it a taste and add more citrus, salt, pepper, cilantro as desired and tomato sauce as preferred.

I've never tried to can this but it stays good for several days. It's the best salsa we've ever made!! This is my dad's recipe except he doesn't do his fire roasted and it's very tasty his way as well.
