I found an interesting pork roast recipe to go along with that Hoppin' John and cabbage. Chef John Folse prepared this on a WAFB news segment last nite and it looked fantastic - the pork was really tender and you could "pull" it just like a BBQ. The only difference from the linked recipe was that he thoroughly browned the butt (in a 1/2" of bacon grease, no less

) before putting it in the oven. I'm going to give this one a try next week.
