I am ISO of some Easy and Healthy recipes to make for myself. I have finally decided to take this diet thing seriously and need some help. If I was a better cook I'm sure it would make this a little easier for me. I'd also be interested in cooking with tofu.
There is a book at the library (Coastal branch) called:

Well, actually I just checked and it's out due back the 27th. Anyway it is
terrific! Every recipe I tried from it has been superb. I'm not usually much of a cook but I am a little bit of a health nut. Very easy recipes and they don't taste "healthy." I have copied about 6 of them that I use over and over.
I've checked it out 4 different times - the last time somebody had torn out two pages - one recipe and it's color photo. I think every recipe includes a photo. There are several pages of "ideas" in the back without photos - dressings, drinks, deserts, etc. Absolutely the best cookbook I've ever used!
