I am ISO of some Easy and Healthy recipes to make for myself. I have finally decided to take this diet thing seriously and need some help. If I was a better cook I'm sure it would make this a little easier for me. I'd also be interested in cooking with tofu.

There is a book at the library (Coastal branch) called: The eating well healthy in a hurry cookbook : 150 delicious recipes for simple, everyday suppers in 45 minutes or less Jim Romanoff [editor] and the editors of EatingWell.

Well, actually I just checked and it's out due back the 27th. Anyway it is terrific! Every recipe I tried from it has been superb. I'm not usually much of a cook but I am a little bit of a health nut. Very easy recipes and they don't taste "healthy." I have copied about 6 of them that I use over and over.

I've checked it out 4 different times - the last time somebody had torn out two pages - one recipe and it's color photo. I think every recipe includes a photo. There are several pages of "ideas" in the back without photos - dressings, drinks, deserts, etc. Absolutely the best cookbook I've ever used!

Another easy snack.
Thaw some frozen fruit (or use fresh, but I find thawing the frozen gives some juice and is sweeter) and stir in a little fat free vanilla yogurt. I do that if I get a sweet tooth. Sometimes I add rolled oats and/or some chopped nuts.

Do a search for recipes here on SoWal. Also, look at the SoWell on Sowal threads. There's some good stuff posted.

Are you doing low-fat or low-carb?
