hey, it worked with wrobert and the awesome watermelon me and mine enjoyed, so I thought I'd seek out those who might know of a source for fresh cabbage palm hearts......found in young Florida Cabbage Palm trees (the state tree).

I know that mid-Florida is the best place to find them, but I just made my way through there, from Sarasota to here, and I can't seem to find a source for fresh-cut palm hearts. Swamp cabbage, for those who don't know, is made from the heart of the Florida cabbage palm, cut when the young tree's mid-section (above ground, less frond cap) is about 4 feet in height. One then peels off the outer "skin" to get to the 4-6" heart....the bottom 6-8 inches is soft, white meat which snaps off in pieces. Those pieces are put in a pot (stainless is best) with a little smoked meat (cooked bacon, or smoked pork neck is best) and some onion, and cooked until "greenish" and mid-crisp (gray is BAD, as it is overcooked and mushy). Put together with some grilled chicken/rabbit, corn bread, and other Southern what-not, and you've got a meal that's second only to time spent alone with "mama"......and, trust me, "heart of palm" from a can, care of Publix, is not even reminiscent of anything resembling the fresh stuff, and you can't cook it to make it seem so (I tried).

Anyone got any "kin" located in the right locale that can help me encounter some fresh-cut goodies?!

Actually from time to time I've seen palm hearts at the Publix produce department.

Nope. Never heard of such, and some of my kin speak so Southern that I caint unterstan a sangle thang tey sayad. These swamp cabbage folk must be of the kind that my daddy says "These kinfolks...They don't come to our gatherings. They just come to the edge of the woods and look out." I'd love to know if you find anyone who knows your produce; I might meet some undiscovered cousins.

I've heard of it before but it was very long ago and over in the Carabelle area. Very rural eatins' ;-) I seem to remember gator was served with it too.

talked to my big brother from south florida last night....he says that swamp cabbage is $500 a serving. Seems that the state tree is protected now! And I saw a LOT of cabbage palms awaiting the Proverbial pickin' between Chiefland and Blountstown....there ought to be a law!!! (that says I can re-live my wonderous youth, and enjoy some fresh swamp cabbage)

My best memory from youth is those true-South after-church pot-luck lunches complete with fried chicken/rabbit, chicken/armadillo/gopher (land turtle) and rice, swamp cabbage, collard greens, fried okra, potato salad, and home-baked biscuits or corn bread.....all finished off with fresh watermelon, and peach/apple/blackberry cobbler, or apple pie, or key lime/sour orange marangue pie.....served up with ice-cold sweet tea, and home-made ice cream. And they call THIS "progress"?!

I think I might miss those after church pot lucks just as much as you. I'm fairly sure ours didn't include armadillo or gopher tho. :lol: But everything else you mention was heaven on earth. Oh, and banana pudding too. There were always 9 or 10 corning ware dishes of the stuff. And purple hull peas. Oh, chicken and dumplings! I might even visit my old Baptist church in Andalusia if they served up another summer pot luck lunch on the side lawn under the huge oaks. :love:
