Our Thanksgiving is looking better and better, we found out last night that the Greek branch of the Funn family will be joining us. I am tempted to make the famous mirliton casserole that went over so well last year, time and ingredient availability permitting.

BR is your low-fat breakfast casserole posted here somewhere pleeease? Sounds like a grayt way to start the day. Mom's making Ambrosia for dinner at her place too. :love: I'm taking the ham, spinach madeline, pumkin and a mincemeat pie (for Hubba.)Oh and my sweet tea. My gulls are bringing the mashed taters and cranberries and sis is bringing rolls and dressing. Momma's making pumpkin cake , turkey, gravy, sweet potatoes, peas, ambrosia. Sis and fam from Arkansas are coming too. They'll surprise us with good stuff too. Gosh I feel so spoiled. Thankful but spoiled. ;-)

What a wonderful way to spend the Thanksgiving holiday! Time with family, old friends, and new friends. It doesn't get any better than that. Have funn.....but then again....how could you not.

Low-Fat Overnight Breakfast Casserole

I developed this recipe from a ?high-fat? one. This is great for Thanksgiving morning when you want to serve something special, but don?t want a lot of calories.

7 slices bread (I prefer something other than white, but not too grainy)
1 tablespoon margarine
1 package Canadian bacon, chopped
6 ounces low-fat cheddar cheese, grated
6 ?Egg Beaters?
1 ? cups low-fat milk
1 teaspoon salt
? teaspoon black pepper

Cut crusts off bread, and place on bottom of 9 X 13-inch casserole dish greased with margarine. Sprinkle bacon and cheese on top of bread. Combine eggs, milk, salt, and pepper, and pour on top. Refrigerate overnight. Bake at 350 degrees for 45 minutes. Serves 8 at 175 calories per serving and 3 grams of fat.

Ditto. I have cooked Thanksgiving at my house since our daughter was a baby, and the most any of my extended family has brought is a ham (no work) or a pumpkin pie that they picked up at Kroger. :bang: And then they sit around and talk while Big D and I hand wash all of the dishes that won't go in the dishwasher.:pissed:
