Low-Fat Overnight Breakfast Casserole

I developed this recipe from a “high-fat” one. This is great for Thanksgiving morning when you want to serve something special, but don’t want a lot of calories.

7 slices bread (I prefer something other than white, but not too grainy)
1 tablespoon margarine
1 package Canadian bacon, chopped
6 ounces low-fat cheddar cheese, grated
6 “Egg Beaters”
1 ? cups low-fat milk
1 teaspoon salt
? teaspoon black pepper

Cut crusts off bread, and place on bottom of 9 X 13-inch casserole dish greased with margarine. Sprinkle bacon and cheese on top of bread. Combine eggs, milk, salt, and pepper, and pour on top. Refrigerate overnight. Bake at 350 degrees for 45 minutes. Serves 8 at 175 calories per serving and 3 grams of fat.

BR...you don't have people trained well enough!! The kids are suppose to clean up. All of ours know that they must clear the table and load the dishwasher. Of course now the kids are all adults and it still works!
Try not to work yourself silly. I'll be washing dishes too, along with my daughters and sisters. The next day at my house we will have sandwiches and leftovers on paperplates. :clap:

Okay...this is serious :D! I have a vegetarian guest coming ...I was thinking of making some of the dressing with vegetable stock w/o the meat.
How thoughtful of you, Miss Kitty. I'll do that dressing for my gull too. You could make some pecan meal notmeatballs in bbq sauce if you know where to get some meal. I'm making special K cereal loaf with walnuts for my gull. It's made with cottage cheese, eggs, special k, onion soup mix, onion.

Our Thanksgiving is looking better and better, we found out last night that the Greek branch of the Funn family will be joining us. I am tempted to make the famous mirliton casserole that went over so well last year, time and ingredient availability permitting.


YES YES Mirliton casserole- for Thanksgiving AND Christmas!!

Where are you going to get mirlitons?

BR, what is your daughter's recipe for the lemon-garlic beans? I have to take a veggie dish to our Thanksgiving dinner.

Roast Prime Rib, (on the bone of coarse); & Peanut Butter Bars!

What day? If I'm home I'll make some black bean salsa to go with the pinks. Ask Jessifunn- There is a dip for every occasion.

The Auburn airport told them to be there three hours before the game! :blink: I guess the shuttle service is pretty busy. :dunno: No, they don't have any tickets, I told 'em just to wing it!

Or......we could do pinks late Turkey day....I'll walk over from Maunsel's and bring Cotton to see Milly!

Even my dressing has turkey neck meat and stock in it. I was thinking of making some of the dressing with vegetable stock w/o the meat.


Beans. Put him in a guest room on another wing of the house or put him up in a hotel immediately following dinner. Beans actually have more protein than tofu.

Other ideas- nuts and berries, a plate of carrot sticks, and maybe you can shape a blob of tofu into something resembling a turkey. Grab some dirty bird feather out of the yard, stick it in the tofu turkey's bum, drizzle a little chocolate over to resemble gravy, and Wa La!

Since vegetarian sausage is soysage, Bdarg says vegetarian turkey is To-fukkey.:lol:
