I have several Quickies...

1. Turkey...Umm somthin's?
Get little loaf pans, Place toast sliced in 1/2 at bottom,
get some Good Turkey Deli meat.
Fold Deli Turkey over Toast,
Pour HOT Turkey Gravey over it, sprinkle with some chedder Cheeze pop in oven till cheeze just browns.... Done.


2. Nacho's Chicken or Beef. These always went over well.
Round corn chips Place on Dinner plate single layer
Cover with cooked Meat prepared with Taco seasoning
then add Tons of Shredded cheeze,
Micro Wave until Cheeze is melted over meat.
Cover with Shredded lettus,
Then I set out little Damskins with chopped tomatos, onions, olives some sour cream etc, everone has their own Dinner plate, (or small saucer for youngins) and can fix their Nacho toppings as they choose.
Kids loved this one!

We should have a "What's for Supper" Exchange thread, so if you want to add a receipe you can and then if you Need one, you go look them up! :) Just a thought.

Williams Sonoma has a Weeknight Cookbook. Some pretty good recipes so far. There are some fancy ones. But have sections for 20 minutes total, 30 minute, etc...

I agree with Peapod on the overdose of comfort food @ this point and definitely no good produce yet. Too cold (or wet/snowy) to grill. I'm all for take-out too :clap:and the left over Valentine's candy!

Okay, Peapod hit the nail on the head. I have the winter doldrums and I'm bored with winter food.

So, I finally got my butt motivated and found a recipe. I decided to make a penne tossed with zucchini, yellow squash, ricotta, and basil, tossed with shaved parmesan. I found a recipe for wine glazed chicken http://splendidtable.publicradio.org/recipes/main_wineglazedchicken.shtml to go with it. I served it over arugula with a lemon viniagrette. Or, I intended to.

I'm three minutes from tossing the penne, and Skunky gets called to the hospital. He'll be 3-4 hours.

I am going to have a really hard time summoning the will to cook the rest of the week.

Week's Schedule

Monday -- Dried out and gross glazed chicken and gooey penne mess.
Tuesday -- Stinky's!
Wednesday -- Hamburger Helper Beef Stroganoff
Thursday -- Chicken Helper Chicken Enchilada
Friday -- Tuna Helper Tetrazzini

Thank god for the 3/5 bottle of wine left after the glazing.

We do need a dinner exchange!

Well, then, don't. Who says you have to make a recipe every night? Cut yourself a break and don't break out the cookbooks/internet. There's nothing wrong with making a dinner of eggs or grilled cheese sandwiches or spaghetti or other simple no-brainer foods. Sometimes you need to clear your head of fabulous recipes and go minimalist...trust me, you'll get bored of it eventually and your cookbooks will once more inspire you. Culinary inspiration comes and goes in waves. You're at low tide now: don't fight, enjoy the change of pace. (I bet Skunky won't mind, either, not if you tell him it's his Lenten obligation to eat simply. ;-))
