Monday -- Dried out and gross glazed chicken and gooey penne mess.
Tuesday -- Stinky's!
Wednesday -- Hamburger Helper Beef Stroganoff
Thursday -- Chicken Helper Chicken Enchilada
Friday -- Tuna Helper Tetrazzini

Thank god for the 3/5 bottle of wine left after the glazing.

We do need a dinner exchange!

Ew! No wonder you are in a cooking funk! Have to eat out/takeout at least 2x a week! ;-)
 
Well, then, don't. Who says you have to make a recipe every night? Cut yourself a break and don't break out the cookbooks/internet. There's nothing wrong with making a dinner of eggs or grilled cheese sandwiches or spaghetti or other simple no-brainer foods. Sometimes you need to clear your head of fabulous recipes and go minimalist...trust me, you'll get bored of it eventually and your cookbooks will once more inspire you. Culinary inspiration comes and goes in waves. You're at low tide now: don't fight, enjoy the change of pace. (I bet Skunky won't mind, either, not if you tell him it's his Lenten obligation to eat simply. ;-))
You are so right, Mermy. I am so tired of soup and other winter food, but it's still too cool for me to get excited about a salad for dinner. Then in September, I am sick of salads and am ready for cooler weather so I can make some chili.

Tonight I grilled some salmon and sauteed spinach in olive oil and garlic, then added low-sodium soy sauce to deglaze the pan. I loves me my spinach, so I cook one bag per person. Sometimes I make rice with it, but tonight I didn't.

I'm like Punzy -- we also cook a lot of Italian and Mexican food. However, one easy weeknight meal for us is a stirfry. For example, in a wok saute chicken, garlic, and onions in olive oil until the chicken is done, deglaze the pan with some water and low-sodium soy sauce, and before that cooks down add some broccoli and let it steam uncovered until al dente. If you want to give it some extra punch, sliver some fresh ginger and green onions as a garnish. Serve with rice.

Update:I got home about 6:30. Yardbird was on the stove. I got called out to the hospital to admit two people. Got back at 10:00. Her chicken dish was awesome! How will she top it tomorrow?
