"DOG DAYS" CHILLIN' | $48

With July come the "dog days". It’s hot, sticky and we all need more beach time! This menu offers some new recipes and do-ahead preparation that makes all that possible. We'll have a Watermelon and Feta Salad with Lime Syrup; "Butt Rub" Seared Flank Steak with Smoky, Spicy Shrimp Slaw and Mango, Ginger Ice Cream with Cardamom.

MEDITERRANEAN FARE | $55

Tomorrow will be all about hot dogs and hamburgers but tonight let's taste some delicious Mediterranean "coastal" dishes using Gulf Coast Seafood! These recipes are very simple both in the ingredients and preparation and offer a little something different. We’ll start with a Panzanella Salad with Herbed Vinaigrette; Fresh Gulf Red Snapper with Tomatoes and Kalamata Olives and Capers; Artichoke Heart and Potato Gratin with Pecorino Romano and for dessert homemade Espresso Ice Cream.

Star anise, mace, cardamom, vanilla bean paste, nutmeg, coriander, cumin, cinnamon and ginger root powder are wonderful aromatic spices we may not use often that can really enhance many of your recipes. Come learn, taste and discuss these exotic spices as we prepare a Summer Corn Salad with Turmeric; Aromatic Spice "Blackened" Salmon, Sweet Potato “Pasta” and Mango Blueberry Cobbler with Cardamom for dessert.

Over the past several years I've created recipes for quite a few wine pairings classes featuring delicious and affordable Spanish wines. In the process I've learned about the unique ingredients and flavors used in Spanish cuisine. In the class I'd like to share some simple to prepare dishes you’ll enjoy this summer! We'll start with a Red Gazpacho topped with avocado and cucumber finished with Spanish Sherry Vinegar, traditional Tortilla Espanol (Spanish potato omelet); Spanish Pork Tenderloin in Pimenton (Spanish Smoked Paprika) Sauce and for dessert Torta de Santiago or Flourless Almond Cake.

Join us as we sample some unique grapes and delicious wines from Spain complimented by traditional Spanish dishes. We’ll enjoy two Spanish Cavas; Pere Ventura Tresor Brut Reserva with Manchego Cheese and Fried Marcona Almonds; Pere Ventura Tresor Brut Rosé with a Salmon Salad; two wines from Rioja; Faustina VII Blanco with Roasted Vegetables and Serrano Ham and Faustino V Reserva with Slow Cooked Pork in a smoky tomato sauce.

We'll start with a salad of Baby Greens, Snow Peas, Steamed Asparagus and Toasted Pecans, Champagne Vinaigrette; Panéed Grouper with Lemon Parsley Pan Sauce over Butter Peas and simple Mango "Mousse" with Toasted Coconut for dessert.

Growing up in New Orleans summers meant weekly Friday night trips to the French Market for fresh summer veggies we'd enjoy all week. This class features some simple but delicious recipes I think you'll enjoy sharing with your family and friends that use all the wonderful dishes from my childhood. Nothing fancy . . . just New Orleans good! We'll start with Chicken and Corn Maque Choux (chicken thighs smothered in vegetables and fresh cut corn); Cajun Roux Peas with Andouille Sausage and Vidalia Onion Pie.

Most of the work can be planned and completed days before serving with little "last minute" cooking time . . and the recipes are delicious! We'll make an awesome Baby Greens, Snow Peas, Asparagus, Strawberries and Toasted Pecans with Champagne Vinaigrette; Asian Marinated Braised Beef Brisket; Baked Seasoned Mashed Potatoes and Bing Cherry and Dark Chocolate in Filo Cups.

HANDS ON BASIC SUSHI | $48

Get ready to roll up some fun as designer sushi chef Dan Pettis instructs you on the basic skills of fine sushi in this hands-on class. For those who have never tried to make sushi at home, this class will teach you the skills you will need to impress your family and friends at your next dinner party. Maki sushi (sushi rolls), nigiri sushi (traditional sushi), and sashimi will all be covered with an emphasis on proper presentation. The class covers ingredients used for sushi production and the basic history of the origins of sushi. Just bring your appetite and invite a friend to share the experience. We'll provide the rest!
