I'm pretty sure once the Fry Daddy was invented, that's what we used, saving the iron skillet for fried chickens.

It's almost like ground meat that's held together by some kind of edible webbing material. Never had it batter fried.

Alton Brown did an episode on it. It's basically tenderized within an inch of it's life.
