Paula Deen's Krispy Creme Donut Bread Pudding w/Butter Rum Sauce washed down with a H?agen-Daz Triple Chocolate Milk Shake....you don't have to eat it, just reading the recipe will provide you with the fat you require.

:rotfl:Gained a lb. in my head just reading that Shel. Can't have the donuts or bread, but I can have sugar free ice cream. :D

Toots, yep, I am gonna eat some good fats thrown in with the baddies.
Thanks Dunelover for the oatmeal idea. I will eat some peanut butter every now and then. Can't imagine having bacon every morning and home fries. That can get boring and I am not sure how many months I will be on this regime.

Mango do you like garlicy pasta? If so I have a decadent recipe for you where all the ingredients are healthy. I didn't think of this at first because I've lightened it considerably over the years, but I went back to look at the original and it has a ton of olive oil and parmesan.

It's from the California Pizza Kitchen cookbook. I've been making it for at least 10 years and it is the one recipe that everyone in my family loves, so we make it often. It is addictive and it makes a lot, and it works nicely as leftovers (I have never tried to freeze it -- it would be interesting to see if you could freeze single portions in one of those Ziploc storage entree containers.) There is a lot of garlic but I haven't found the taste to be overwhelming the way it is cooked.

Broccoli and Sun-Dried Tomato Fusilli

1 pound dry fusilli pasta (or 2 lbs fresh)
1/2 cup extra virgin olive oil
1 teaspoon kosher salt
1/4 cup chopped fresh garlic
2 tablespoons chopped fresh thyme leaves
Approximately 12 oil packed sun dried tomatoes, drained and sliced in strips
1 quart blanched broccoli florets, drained bite size
1 1/4 cups grated parmesan cheese (1/4 cup reserved for garnish)


1. Cook pasta until al dente according to package instructions. Pasta may be cooked slightly ahead of time, rinsed and oiled and then "flashed" (reheated in boiling water).

2. Heat olive oil in a large nonstick frying pan over high heat. Add salt and garlic; when the garlic just begins to brown, add thyme and sun dried tomatoes. Toss and add broccoli. When broccoli is heated through, add drained pasta. Add 1 cup parmesan to the pan, tossing and stirring to mix.

3. Remove from heat; serve in warm bowls with a fresh dusting of parmesan.


NOTE: As I said, I have lightened this considerably. I always use whole wheat rotini and dry packed sun dried tomatoes (not the ones in oil). I also use 1/3 cup olive oil and about 1/2 cup of parmesan. I also steam the broccoli first to make sure it will be tender and warm, then I just throw it in there.

i was gonna suggest getting a paula deen cookbook and picking anything out of it to cook, but shelly beat me to the punch. i can't stand to watch paula, but the broad can sure cook some good stuff - yum yum

trans fats anyone?

Bob, my mother, and her cousin, who is a wedding caterer, are both upset about Crisco right now. It has always been a key ingredient in a light, fluffy pound cake.

Now Crisco has removed the trans fats, and the pound cakes won't rise. As far as they have been able to find, all of the shortening has removed trans fats. (Of course, they don't have SoWal. Maybe y'all know something they don't!) They are now having to use unsalted butter. Very distressing...

If you are concerned about the saturated fat content in coconut milk, know that this saturated fat has been shown in many independent studies to be a good saturated fat, easily metabolized to give your body quick energy. Contrary to popular myth, it does not transform into bad cholesterol to clog up arteries. In fact, cultures around the world that depend on coconut as their main source of fat have been found to be free of heart disease. The principle fatty acid in coconut milk is lauric acid, which is the same fat found in abundance in mother's milk and is known to promote normal brain development and contribute to healthy bones. It also has important anti-carcinogenic and anti-pathogenic properties and is less likely to cause weight gain than polyunsaturated oils.

These are healthy fat snacks/meals:

-1/2 avocado drizzled w/ virgin olive oil and cracked black pepper

-dish of fresh berries (strawberries, raspberries, blueberries) in heavy cream or half & half

-bruschetta - toasted bread topped with different fresh foods mixed with olive oil: diced tomatoes, portabella mushrooms, artichoke hearts, basil, or an olive tapenade

I'm always looking for ways to fatten up my young sons. The pediatrician recommended any vegetables from "southern style" restaurants, side dishes from Boston Market (chain restaurant), and mashed potatoes with cream and butter. Previously I made mashed potatoes with Yukon Gold potatoes and little to no butter. And I though they were good. But, once you add a carton of cream and a stick of butter. . . .THAT was good!

You did say good fats, right? No? Healthy fats? Sorry can't help you there! :D

TFT, yes, I LOVE garlic. MANgo thinks I put it in my Cheerios when he is not home. Thanks for the recipe.
Bsmart, yes forgot about coconut milk. I have a great recipe for CoQuito, a Spanish egg that uses coconut creme, so I'll be keeping that around as a treat to get that nasty yellow medicine from getting glued to my mouth.
Scooterbuggy, the tapenade is a good idea, thanks for the reminder. Trader Joes has an addictive olive tapenade. They have several kinds. I didn't know about the Trader Joes Butters Pea, so I'll check that out when I go back there.
Tistheseason, I plan on making lots of mashers with heavy cream and some Bisquick bisquets occasionally like SJ suggested.

Sunflower oil is a good fat, not sure if anyone has tried Lays Chips fired in sunflower oil, but they are addictive and I think taste better than Cape Cod chips which were always my fav until I discovered the Lays chips.

If anyone has some bad fat mushy recipes, please post.

Might I float flax seed gel caps? I take them to increase my HDL. I used to take fish oil caps but the fishy taste after an hour was, umm, gross.

What are you taking for $900 a month, anyway?
