I'm canning salsa tomorrow (Monday) and have lost my recipe I used last year. Do any of you have a grayt recipe ? Mine was tomato based with lime ,chalantra (sp) ,black beans,corn, garlic and stuff like that. I have a picnic table full of fresh ripe tomatoes just waiting to be apart of the mix!

We like to fire roast our tomotoes, onion, bell pepper, and jalepenos

We use 2 big cans of tomotoes, clearly fresh is better
1 medium onion
1 bell pepper
2-4 peppers
2-3 cloves garlic
cilantro
lime juice or grapefruit juice

This is my dad's recipe, we added the fire roasting to his ingredients

This isn't your traditional Salsa but I really like it. It's called Texas Caviar and it a good change of pace.

2 Cans of Black Beans (I get the pre-seasoned ones)
1 Can of Black Eyed Peas (again there are lots of varieties)
Diced Green Onions
Diced Tomatos
Diced Medium Bell Pepper
Diced Jalapeno Peppers or Chilis
Lime Juice

You can alter this to your taste. I like to add garlic and cilantro as well.
 
Daughter's Recipe:

2-3 tomatoes (preferably 2 large red and 1 yellow), chopped
1 tablespoon tomato paste
2-3 tablespoons extra-virgin olive oil
1 teaspoon kosher salt (or to taste)
? teaspoon red pepper flakes (or to taste)
1-2 limes, juiced
1 small onion, chopped
? bunch cilantro, chopped
1 fresh jalapeno, seeds removed, minced
20 slices of jalapenos (from a jar)
1/3 cup jalapeno juice (from the jar)
1 teaspoon sugar
1 tablespoon cumin

thanks to all that posted. Jdarg it would be sweet if you'd share also. I made my first batch back a couple of weeks ago with black beans,then last Friday I canned 12 more qts using blackeye peas. It was a hit on the 4th.:wave:
