Hello Everyone,

My name is Thomas Hampton and I am one of the owners of a new restaurant in Grayton Beach called FIRE. I am writing this introduction to introduce not only myself but also the other owner of FIRE, Brenda Darr. Both Brenda and I have been friends for a very long time and have worked together on several projects in the past.

FIRE is a concept of Brenda’s that she built in New Orleans over two years ago . . . she combined the open and cosmopolitan feel of a New York loft with the satisfying freshness of culinary delights prepared in the wine country. FYI: Brenda and I have dragged many a family member and confused friend to Napa promising meals that will create unknown sensations and etch memories into an area of the brain often scorched by fast food. To make a long story longer the locals loved it and was a welcome change to the often too fried, too greasy, or just too everything. She then presented moving the restaurant to Grayton Beach to her staff and the vast majority packed up their life and followed her to 32459.

FIRE is a restaurant that categorizes itself as “American Cuisine with an emphasis on fresh”. What we want to do is change our menus twice a year for the Spring/Summer and Fall/Winter. These menus carry our signature dishes that you can count on every time you dine with us. Ingredients in these dishes will only change based on availability of fresh product. As Chef Carl Schaubhut becomes more familiar with the purveyors in the area we will offer our “Farmers Market” menu. Our goal is to showcase availablein season fruits and vegetables, fine meats and cheeses, and artisan breads. This menu will showcase fresh items that we will try and purchase within 100 miles of the restaurant in order to provide the freshest product available and support the local community.

Currently we are open for dinner everyday at 5:30pm and lunch everyday except Saturday from 11:30 am to 2:30 pm. As we get a better feel for flow of life in Grayton we may adjust the hours. FIRE is located a 55 Clayton Lane, Grayton Beach, Fl 32459 which is one block north of 30A next to Frank’s Cash and Carry. Our telephone number is 850.231.9020 and our fax is 850.231.0860.

During our brief time here of hustling to get the restaurant off the ground, everyone of us have found the people in this area to be extremely friendly, positive and encouraging. We have found nothing but encouragement from business owners like Toni’s Perennials and Produce, Bud and Alley’s, D & K’s Caf?, Hurricane Oyster Bar, Frank’s Cash and Carry just to name a few. Trust me when I say that all of us at FIRE deeply appreciate the support during this time of creating a new business.

Our current menus are available on our website www.restaurantfire.com.

The fireballs were transported in a sealed vault via refrigirated UHaul with a police escort from LA, MS, AL and FL. They have been lovingly placed in the front entrance in a spiffy new vase for all to enjoy.
