Two or three years ago, there was an episode of a now-defunct Food Channel show (like DDD but not the same). They toured the "Mississippi tamale trail". It was a pretty complicated process for both the shell and the filling.
You can go to www.tamaletrail.com and find recipes along with step-by-step instructions and pictures so you can make your own. Hope this helps.
