florida girl has a lot of good suggestions. From experience I've learned not to over whisk.....something I just did with a key lime pie:bang: ....someone was in the kitchen and I lost my concentration. And speaking of concentration I find that to be a key in keeping the recipe consistant.

Did the recipe call for eggs at room temperature?

Practice makes perfect!!!!! And, I bet yours will soon be there!:clap: :clap:

Has anybody tried the Sagaponack Corn Pudding recipe (Ina Garten's recipe)? I have tried twice now, and obviously, I'm doing something wrong. I made it again last night. I followed the recipe regarding measurements, etc., both times.

The first time, it overflowed into the water. Last night, the top was light and almost not quite done, but the bottom was almost over-done. Very frustrating, especially when Ina ranks this recipe as "easy" :blink: :D Just wondering if anyone else has tried it and what they're result was. Actually, both times, it tasted fairly good, but still...:blink: Any feedback would be appreciated.

What you're doing wrong is not trying the recipes Gypsea and I gave you. Both of them are delicious, and unlike Ina's recipe, ours don't fail. :D

No...the recipe didn't specify eggs at room temp. I'll make sure they are next time I try it. Thanks for the suggestion :love: and I think you're probably right about the over-whisking too!

All good things in time Mermaid, (and I will try your's and Gypsea's recipes...thank you both again) but think about it...how many corn puddings :drool: can one eat in a month without suffering the obvious, unfortunate consequences? We're (ok just me :rotfl: ) on a diet of salad and the like for the next little while :D
