I'm looking for a "good" soup recipe. Preferably something with chicken, but after that, the sky's the limit. I found a recipe I thought I might try for a chicken/broccoli/cheese tortellini concoction, but I thought I'd draw from the pool of chefs on Sowal as well. Any ideas? Any family favorites? :dunno:

My favorite soup for general purpose is a broccoli cheese soup. Look up a copy cat of TGIF's recipe for a basic form. I sometimes make a roux with the flour for a little extra richness, or use whipping cream instead of the milk/half and half. And I definitely like Kitchen Basics for ready made stock/broth. Sauteeing a couple of chicken breasts and adding to this would be tasty I am sure. Maybe brown the chicken cut into bite size pieces and add it when the broc is added to let it poach the 20 minutes or so til it shreds a bit in the mouth. Can I be a dork and say ..It's SOUPER easy and SOUPER good? :blink:

Italian Chicken and Vegetable Soup​

2 tablespoons olive oil
4 boneless, skinless chicken breasts, cut into bite-sized pieces (about 1 3/4 pounds)
1 small onion, chopped
1 cup sliced carrots (about 3 small)
2 1/2 cups sliced zucchini (about 2 medium)
2 (14.5-ounce) cans diced tomatoes with basil, garlic, and oregano
2 (14.5-ounce) cans chicken broth
Grated Parmesan, optional

In a large Dutch oven, heat olive oil over medium-high heat. Add chicken, and cook for 10 minutes, stirring frequently. Add onion and carrot, and cook for 5 minutes. Stir in zucchini, diced tomatoes, and chicken broth. Bring to a boil; reduce heat, and simmer, uncovered, for 30 minutes. Top each serving with grated Parmesan, if desired.

*The next time I make this I will omit the olive oil.​

It's not good for your pan or the food not to have a bit of oil in is it?

No it's probably not good for the pan, but I will use a little h2o next time and drain once the chicken is cooked.

First of all, LOVE your 'tar. I am far too obsessed with that show.

My "chicken soup" recipe: (which I just had for dinner tonight)

Tom Kha Gai (Thai Chicken Coconut Soup)

  • 1 chicken breast cutlet, sliced thin
  • 2-3 kaffir lime leaves, torn in half (these aren't necessary, but they help quite a bit
  • 1 (2-inch) piece of lemongrass, hard outer part removed. (use only the bottom part of the stalk.)
  • 1 (1/2-inch) piece of fresh ginger or galangal, sliced thin
  • 2-4 dried hot red chilies, sliced thin (depending on how spicy you want the soup)
  • juice of 1 lime
  • 1 can of coconut milk (I like the "light" variety for this soup.)
  • one generous handful of cilantro, chopped
Saute the chicken in a small amout of vegetable oil. Add the remaining ingredients except for the cilantro, and simmer until the chicken is fully cooked.
Put the cilantro in a bowl and pour the soup over it.


This recipe just happens to make one generous dinner serving. It's the perfect "dining solo" food. To accomodate more people, just multiply this recipe by the number of diners. (You can probably take it easy on the coconut milk and use a little water or chicken stock if the coconut flavor is too strong for you.)

Good stuff! I had considered the coconut soup also but thought maybe the kafir leaves or lemongrass to come by here. I like the addition of red curry paste at the beginning when sauteeing the veg and some fish sauce added a bit before the end. Lime zest subs ok for the kaffir leaves.
