okay you sowallers, I'm sharing my mom's beef and vegetable soup. this is so delicious with hot southern cornbread slathered with butter. this is a "complete comfort food". and easy.

2 lbs. ground round
1 chopped onion (sweet)
1 heart of celery, chopped
1 large can Hunts whole tomatoes, pureed
1 1/2 large can water
1 cup frozen lima beans
1 cup frozen cut okra
1 cup frozen white shoepeg corn
1 cup frozen peas (blackeyed, pinkeyed,crowder, or any other)
1 hot pepper ( not necessary) I like the skinny green hot peppers, but you can use jalapeno.
Salt and pepper (Don't under or overdo)

Brown meat with onions and celery. Then add tomatoes and water. Then add veggies. (You can take the pepper out at any time, if it's getting too hot for your family.
Bring soup to a boil and then cut heat to a low heat, but still a very light boil. Cook till and veggies are done. I like to cook mine about an hour and a half. Good luck.

Here is a pretty good White Chicken Chili recipe:

4 cups cooked chicken breast meat (I sautee cut up breast meat in olive oil, but in a pinch, and to make it easy, you can use frozen or refrigerated fajita chicken, chopped)
2 16oz cans great northern beans
1 can cannellini beans
2 4oz cans chopped green chilis
4 cups chicken broth ( I also, will sometimes, use knorr chicken cubes instead)
2 cups 1/2 & 1/2
1/2 cup white wine (or more)
1 tsp ground cumin
1 tsp oregano
dash cayenne
3 cups grated monterey jack cheese

In a large stock pot put all the ingredients except cheese. Heat until steaming. Add the cheese until melted and serve!

any of these ingredients are optional. sauteeing onion & garlic before adding ingredients would be good as well.
This is really good on a cold night or day with corn bread and a salad.

mom called. she forgot to include the potato in this recipe! how can anyone forget the ____ing potato? (is that allowed?)

so please add:
1 or 2 potatoes - diced.

hey, it's alright my uncle loves his mother's chili (my grandmother) so everytime he comes from bham to visit she makes some for him. last time he kept saying "something doesn't taste right with this chili", bless my grandmother's sweet soul she had forgotten the tomatoes.:scratch:

:lolabove: we have all done it. ask jdarg about my seafood and corn chowder without the corn.
