The National Audubon Society Field Guide to Florida is a great reference book filled with many photos and short descriptions for a variety of plants and animals found in Florida. It serves as a good general reference for many things and is a perfect for keeping in your beach house.
Recently, I also found a book which I think relates more specifically to all things found along Florida beaches. Florida's Living Beaches -- a guide for the curious beachcomber, by Blair and Dawn Witherington, is filled with photos and short descriptions of more than plants and animals, and also gives some additional information about habitat, sprinkled with facts about everything from why no dinosaur fossils are found in Florida to sunscreen being a great product to help remove tarballs from feet. Every shell you can imagine finding in Florida, seems to be referenced in this book. I've just begun reading it from cover to cover and already learned quite a bit.
