I second all of these, plus the Indian Mounds at Lake Jackson (just north of I-10 on US 27, aka Monroe St). And if you are into antiques and cool stuff, continue north on US 27 about 15 miles to the town of Havana.
OH, and I'm trying to remember the exact route...(Fuzz? SWGB? Help me out here...) since the price of gas has dropped, you absolutely must take a drive and see the "canopy" roads that the Tallahassee area is famous for. There is a particularly breathtaking route that begins east of town off of Hwy 90 (Miccosukkee? Centerville) and brings you back. Along the way is an old country store that sells fresh-cooked hand-made sausage. I'm pretty sure the visitor's center downtown has information on the route.
Another pretty route is on Old Bainbridge Road, at least until Old Bainbridge approaches "urban" Tallahassee. That part of town is historic in it's own right, as it is called "Frenchtown" for the early settlers of the area. Many folks cut through this area as a shortcut to North Tallahassee or as a bypass for Tennessee Street, but I would not attempt a walking tour. Crime is a little high (pun wasn't intended, but take it for what it's worth).
Now that you have a week's worth of activities in Tallahassee...;-)
Bradfordville Road and Bradley's Country Store.....and one of my favorite Christmas places is Native Nurseries on Centerville Road..they have the most awesome trees, and beautiful nature gifts as well as plants and flowers.
